Alaska Halibut Stew

Halibut and sauteed bell pepper, onion, carrot and garlic in a tomato and dry white wine broth. Seasoned and served hot.
Ingredients -
1-1/2 pounds Alaska Halibut, cut into 1-inch pieces
2 tablespoons Vegetable Oil
2 medium Green Peppers, seeded & chopped
2 Carrots, thinly sliced
1 large Onion, chopped
1 large clove Garlic, minced
1 can (28 ounces) Tomatoes
1 can (12 ounces) Tomato Juice
1 1/2 teaspoon Worcestershire Sauce
1 teaspoon Dried Basil
1 teaspoon Sugar
1/4 teaspoon Coarse Salt
1/2 cup Dry White Wine
 
Preparation:

1. Heat vegetable oil in large stockpot.

2. Saute green peppers, carrots, onion and garlic, until onion is translucent.

3. Add tomatoes, tomato juice, Worcestershire sauce, dried basil, sugar and coarse salt to stockpot.

4. Bring stew to boil. Simmer 10 minutes.

5. Add dry white wine.

6. Add halibut pieces.

7. Simmer 10 minutes until halibut cooked through and flakes when tested with fork.

Vegetables
Halibut is a mild fish, with a light flavor. This is a great stew base that could easily be experimented with including the use of seasonal vegetables and herbs.

Dry White Wine
Use a wine you would enjoy drinking, as the flavor of the wine comes through in the stew.
